采用蛋白酶活力和糖化酶活力较高的米曲霉和黑曲霉经过干燥、分离提取有效的孢子，密封包装而成。曲精的孢子数可达2×10^10个/g以上。既能改善面酱、豆酱的风味，又能加快类的成熟速度，缩短发酵时间。
